Skillet Parmesan Chicken

  1. 1 cup reduced-fat Parmesan cheese, grated
  2. 1 can spaghetti sauce
  3. chicken pieces, washed and skin removed
  4. 1 cup part-skim mozzarella cheese, shredded


  1. Stir 3/4 Parmesan cheese into spaghetti sauce.  Set aside.
  2. Spray skillet with non-stick cooking spray and heat 1 minute.
  3. Add chicken pieces and cook until browned.  Cook until the inside of each chicken piece is no long pink.  Drain. 
  4. Pour spaghetti sauce over chicken, coat both sides. 
  5. Cover and cook 10 minutes or until done.
  6. Top with mozzarella cheese and remaining 1/4 cup Parmesan cheese.
Serve over spaghetti and with a salad!
