Semi-Homemade Vegetable Soup

  1. 3 1/2 cups chicken, beef or vegetable broth, low-sodium (equal to two, 14 oz cans)
  2. 1/2 cup onion, chopped
  3. 1/2 cup celery, chopped
  4. carrots, sliced
  5. medium potato, cut in 1-inch pieces
  6. 1 can reduced-sodium green beans, drained & rinsed
  7. pepper to taste


  1. Mix all ingredients in a saucepan.
  2. Bring to boil, cover and reduce heat. 
  3. Simmer about 20 minutes or until potatoes and carrots are soft.
To lower sodium content, you may use low-sodium broth or make your own from scratch. Also, use cabbage, fresh soup mix, bell pepper or any of the vegetables available in the food package.
