Red, White and Blue Pasta Salad

  1. 1 package (16 oz) whole grain rotini pasta
  2. 20 drops red food coloring plus 2 tablespoons vinegar
  3. 30 drops blue food coloring plus 2 tablespoons vinegar
  4. 1 cup prepared oil & vinegar salad dressing
  5. green bell pepper
  6. red bell pepper
  7. 1 package (8 oz) cheese, provolone
  8. 1 can (6 oz) artichoke hearts, quartered
  9. 1 can (3 oz) black olives, sliced


  1. Slice all ingredients and combine all but pasta in bowl.
  2. Following boiling directions on pasta package, boil 1/3 package of pasta in water (with just enough water to cover pasta, add blue food coloring to water). Boil pasta (about 10 minutes) strain, rinse with cold water. The more food color, the darker the pasta.
  3. Repeat step 2 with 1/3 package of pasta using red food coloring.
  4. Boil remaining 1/3 package of pasta using no food coloring.
  5. While pasta is boiling, mix seasoning as directed on package. Place in a separate bowl.
  6. Add all three colored pastas to bowl with all other ingredients and dressing. Mix together. Chill or serve immediately.
Use your favorite Italian-based salad dressing.
