Mashed Potatoes

  1. 4 - 5 medium potatoes (about 2 pounds)
  2. 2 tablespoons buttery spread
  3. 1/2 cup skim or one percent milk
  4. black pepper to taste


  1. Wash potatoes.  Peel or leave on peel for more dietary fiber.  Cut into big pieces.
  2. Cover potatoes with water in a saucepan.  Bring to a boil.
  3. Reduce heat and let simmer for 15-25 minutes until potatoes are tender.  Drain.
  4. Mash potatoes lightly with a fork.  Add buttery spread, milk and pepper.
Potatoes are considered a starch, so limit your starches by choosing other vegetables more often.
