Dilled New Potato Halves

  1. new potatoes
  2. 1/2 cup yogurt, low-fat, plain
  3. 1 tablespoon horseradish
  4. 1/8 teaspoon dried whole dill weed
  5. 2 tablespons chives, fresh, chopped


  1. Rinse potatoes and pat dry.
  2. Prick potatoes several times with a fork.
  3. Place on a paper towel in microwave oven. 
  4. Microwave on high for 6-7 minutes, turning over after 3 1/2 minutes. Let stand 5 minutes (increase the microwave time or adjust teh time to ensure they are done according to the wattage of your microwave). 
  5. Cut potatoes in half lengthwise, set aside.
  6. In a small bowl, combine yogurt, horseradish and dill weed, and stir well. 
  7. Spoon 1 teaspoon yogurt mixture onto each potato half.
  8. Sprinkle with chives. 
Cut potatoes into quarters for smaller portions.
