Chicken with Fruit Salsa

  1. kiwifruits, peeled and chopped
  2. 1 cup peaches, chopped
  3. 1/2 cup avocado, chopped
  4. 1 tablespoon lime juice
  5. chicken pieces, skinned
  6. 1 tablespoon vegetable oil
  7. green bell pepper, cut in strips
  8. onion, chopped
  9. jalapeno chile pepper, stemmed, seeded and cut into thin strips
  10. garlic cloves, minced
  11. 1/4 cup fresh cilantro, snipped


  1. In a medium bowl, combine kiwi, peaches, avocado and lime juice. Cover and set aside.
  2. Sprinkle chicken with pepper.
  3. In a large non-stick skillet, heat oil over medium heat. Add chicken, and cook 8-10 minutes or until chicken is no longer pink.
  4. Remove chicken from skillet.
  5. Stir-fry vegetables, jalapeno pepper and garlic over medium heat 3 minutes or until heated through. Stir in cilantro.
  6. Divide stir-fry mixture onto 4 serving plates, then top each with a chicken piece. Spoon fruit salsa over chicken and serve.
When in season, substitute nectarines for peaches.

Serve on a bed of rice for a beautiful meal.
