Baked Breakfast Eggs

  1. medium onion, chopped
  2. medium green pepper, chopped
  3. 5 tablespoons buttery spread, divided
  4. 3/4 cup egg mix combined with 1 1/2 cups water
  5. 10 unsalted top saltine crackers, crushed
  6. 1 teaspoon pepper


Preheat oven to 375° 
  1. In a small saucepan, sauté onion and green pepper in 3 tablespoons of buttery spread until tender.
  2. Transfer to an 8 x 8 in baking dish sprayed with non-stick cooking spray.
  3. Pour egg mixture over the onion mixture.
  4. Melt remaining buttery spread; toss with crushed cracker crumbs and pepper.
  5. Sprinkle buttery spread and cracker crumbs over egg mixture.
  6. Bake, uncovered, for 12-15 minutes or until the eggs are firm.
Try substituting oats for cracker crumbs and top with salsa to add additional flavor.

Breakfast for supper, easy and satisfying.
